What is the best way to change the ph of my water?  I have a ph of 7.8 and want it to be below 7.

Why do you want to change it?  Messing with your ph is almost aways a bad idea. 

But, to answer your question, the BEST way to lower ph in an aquarium is by adding CO2, which will increase the amount of carbonic acid in the water.  That is only good for planted thanks, though.
